Description

HÉDÈNE ROSEMARY HONEY: A SWEET AND SUBTLE HONEY

Immerse yourself in the aromatic world of Hédène rosemary honey, a treasure captured by bees in the best fields in bloom. Produced from the blue flowers of rosemary from the Luberon, a shrub that grows wild in sunny, arid and rocky soils, this precious nectar is extracted directly from the hive to offer remarkable raw, artisanal quality. Its subtly floral and herbaceous taste is a fusion of refined flavours that will awaken your taste buds in an explosion of gustatory sensations. Like clover honey, known for its distinct aromatic notes and light fruity touch, rosemary honey seduces with its perfect balance of sweetness and character, offering a rich yet harmonious taste experience.

Flowering begins in January-February, but is most abundant when the first spring days arrive, between early April and May. Harvesting takes place in May.

A TASTE JOURNEY WITH MEDITERRANEAN SCENTS

Harvested in spring, Hédène rosemary honey draws its sweetness from the heart of the Luberon Regional Park. It has a very discreet fragrance and a mild flavour. Its creamy texture becomes liquid before undergoing rapid crystallisation, leaving a delicate granular texture on the palate. As a result of its secretion, its colour can vary from iridescent white to pale yellow or even shades of grey, like lavender honey, bearing witness to its pure state and natural origin. More floral than Hédène acacia honey, this honey from Provence melts in the mouth with fresh, slightly acidic botanical notes, reminiscent of the sunny scents of the Mediterranean basin.

The seductive scents of Hédène rosemary honey from the Luberon fill each glass jar, witnessing the magic of the honey harvest by the tireless beekeepers. This honey, with its beautiful clear colour, embodies the meticulous production of the region's beekeepers. These masters of honey-making transform the work of the bees into a truly exceptional elixir. Each spoonful of Hédène rosemary honey reflects the authenticity and craftsmanship of the bees, hand-harvested in the heart of the Luberon, a rich, unspoilt terroir. Its delicate, slightly balsamic fragrance evokes the warmth and gentleness of the South of France, while its mild, herbal flavour will delight lovers of quality honey.

At room temperature, it retains all its excellent virtues and benefits, recognised since ancient times, particularly its richness in trace elements.

TASTING ADVICE – LUBERON ROSEMARY HONEY

Rosemary honey, also known as Narbonne honey in the Languedoc-Roussillon region, is great for sweetening a slice of fresh bread or a warm brioche for breakfast. It also goes well with strong cheeses such as goat's cheese, creating a subtle balance between vegetal and sweet flavours.

In cooking, it can accompany meat dishes such as duck breast, especially when combined with a honey sauce to add a slightly balsamic touch. Rosemary honey can also be used in drinks: it delicately flavours herbal teas and hot drinks, giving them a discreet, natural floral essence.

Last but not least, it can also be used in sweet recipes such as gingerbread, cakes or foie gras, for a subtle, delicate finish that will delight the most discerning palates. There's nothing more pleasurable than tasting this honey in refined culinary creations, where every mouthful reveals all its richness, and where no one will be able to resist. This honey is also ideal for adding to fruit-based desserts, providing the perfect balance of sweetness and freshness
