2. Prepare the filling
Place the crème fraîche, ricotta, egg yolks, salt, and pepper in the bowl.
Mix for 10 seconds at speed 4 until smooth and homogeneous.
Preheat the oven to 410°F (thermostat 7).
Line a baking sheet with parchment paper.
Divide the dough into 6 small balls (or 2 to 3 large ones, depending on the desired size).
Roll out the dough thinly on a floured work surface using a rolling pin.
Place the pizzas on the tray and leave to rise again for 15 minutes.
Fold the edges slightly to contain the filling.
Spread the ricotta and crème fraîche mixture evenly.
Arrange the slices of goat cheese (about 1 cm thick).
Drizzle honey over the top, according to your taste.
Bake in the oven until the pizza is golden brown, with a crispy crust and melted cheese.
