The Recipe for Baghrir (Thousand-Hole Pancakes) Drizzled with Holly Honey from Cantal and Butter

Ingredients:

For the Baghrir (Thousand-Hole Pancakes):

  • 250 g of fine wheat semolina
  • 50 g of flour
  • 1 teaspoon of salt
  • 1 tablespoon of sugar
  • 1 tablespoon of active dry yeast
  • 1 teaspoon of baking powder
  • 500 ml of warm water

For the Topping:

  • Holly honey from Cantal
  • Butter
Steps
  1. Mixing the Ingredients:

    • Pour the 500 ml of warm water.

    • Dissolve the active dry yeast separately with a little warm water taken from the 500 ml.

    • In the blender, add the semolina, flour, salt, sugar, active dry yeast, and baking powder.

    • Blend everything for about 2-3 minutes until you obtain a smooth and homogeneous batter.

  2. Letting the Batter Rest:

    • Pour the batter into a large bowl.

    • Cover the bowl with a clean cloth and let it rest in a warm place for about 1 hour.
      The batter should double in volume, and bubbles should form on the surface.

Cooking the Pancakes

  1. Heating the Pan:

    • Heat a non-stick pan over medium heat. You don't need to grease it.
  2. Cooking the Pancakes:

    • Pour a small ladle of batter into the hot pan and gently spread it to form a pancake about 15 cm in diameter.

    • Cook until the surface is dry and holes form all over the pancake. Do not flip the pancake.

    • Remove the pancake from the pan and lightly moisten the pan between each pancake to encourage the formation of holes. Repeat the process with the remaining batter.

Finishing and Serving
  1. Preparing the Topping:

    • Melt some butter in a small saucepan.
    • Generously drizzle each Baghrir (thousand-hole pancake) with the melted butter.
    • Add a drizzle of holly honey from Cantal over each pancake.
  2. Serving:

    • Serve the pancakes warm, topped with the melted butter and holly honey.

Tips:

  • For even lighter pancakes, you can blend the batter again after it has rested, just before cooking.
  • You can adjust the amount of honey and butter according to your taste.
  • Baghrir also pairs well with other sweet toppings like jam or slivered almonds.
